Pecan Butterball Cookies

Join Ellen Gefen as she creates her truly delightful Pecan Butterball Cookies. This quick and easy recipe is definitely a crowd pleaser!

Favorite Pecan Butterball Cookies Recipe:

Ingredients:

1 cup coarsely chopped pecans

½ lb. (2 sticks) unsalted softened butter

1/8 teaspoon salt

½ cup powdered sugar

2 teaspoons vanilla

2 cups all-purpose flour

Preheat oven to 350 degrees.

Put the coarsely chopped pecans on a baking pan and toast for 5 to 8 minutes, stirring occasionally, until lightly browned.  Let cool.

Grind the toasted pecans until finely chopped.

In a bowl mix:

butter

salt

powdered sugar

vanilla

Add chopped pecans.

Sift flour into mixture and blend well.

Take pieces of dough and make approximately 1-1 ½” balls and place on greased cookies sheets or cookie sheets topped with silicone mats.

Bake for 12-15 minutes, rotating the sheets midway through baking so they evenly brown.

Take out and let sit for approximately 1 minute then transfer to cooling rack.

Once cooled completely, roll cookies in powdered sugar and then place cookies in a container filled with powdered sugar to store!

TIP—Cook one cookie sheet in the oven at a time for more even baking and cook in top 1/3 of oven.
